install.sh: Remove -u flag from cp commands for macOS

The cp command shipped with macOS does not have the --update flag or an equivalent so the theme could not be installed there.
As of January 20, 2025 all repositories will be limited to 1GB in size. If your repository is over this size beyond this date, it will be removed.
